Ingredients (SERVES 4 – 6):
4 – 6 Gardenia Original Wraps
1 onion, sliced
2 pcs boneless chicken legs
1 tsp Cajun seasoning mix
5 eggs
80 g grated cheese (Parmesan, Cheddar, Emmental)
100 g fresh lettuce
100 g cucumber, shredded
50 g mayonnaise
2 tbsp ketchup or garlic chilli sauce
9 cherry tomatoes, cut into half

9 cherry tomatoes, cut into half
Method:
- Heat oil in pan, sauté onions briefly till fragrant. Season chicken with Cajun season mix and pan fry till cooked. Allow chicken cutlets to cool.
- Pre-slice the chicken cutlets into thick strips
- Beat eggs lightly and season with some salt. Heat oil in the frying pan, add about 3 – 4 tbsp of egg mixture to create thin omelet.
- When omelet is almost set, add some grated cheese and cover with 1 piece of Gardenia Original Wrap.
- Invert the frying pan onto a tray to flip over the pancake. Toss the pre-sliced chicken with mayonnaise and ketchup. Place some of the chicken mixture on the wrap and add lettuce and shredded cucumber.
- Roll up the wrap and cut into 3 pieces. Garnish with cherry tomatoes on top of wrap, skewer it and serve.
